This recipe was developed by the inspiring Elizabeth Carroso, so before we get to the recipe, we'd love to give you a short background story on Liz and why Outback Harvest is inspired to share this recipe.
Elizabeth is a Health & Wellness coach who travels the world spreading her knowledge of nutrition to people looking to lead a healthy and happier lifestyle.
Her website, Back to Basics Nutrition is structured around Elizabeth’s passion for food, general health, wellbeing and healthy lifestyle choices. Liz has always focussed on creating healthy food from staple ingredients to ensure her family was consuming real food, built from the ground up, essentially taking things ‘Back to the Basics.’ It wasn’t until 2008 when Liz was half way through her Health Science and Nutrition course that her true health journey begun, having been struck with a potentially life threatening health scare.
The realisation from then on was that there is much more to health than the food we consume. There are countless factors that contribute to good health including stress management, our everyday environment and sleep. Finding a synergy between thoughts, food, movement and rest are the basics foundations for allowing our bodies to flourish, giving us the opportunity to live in optimal health and happiness in the best possible way.
Elizabeth and her daughter Chani designed a coaching program, The Healthstyle Emporium (HSE). The HSE brings together their hunger for health and happiness to create a beautiful program that has helped hundreds make their once seemingly impossible goals become seamlessly achievable. The Healthstyle Emporium has had an impact on many and is inspiring people all over the globe to make small sustainable and achievable adjustments that lead to significant long term changes in health & wellbeing.
We were extremely excited and honoured to have Liz get kitchen creative with our Teff to develop a range of sweet and savoury recipes that are fun, full of nutrition and fiercely irresistible.
Bringing all of her values together to design a recipe that combines health with pure happiness. These Raw Wagon Wheels are truly irresistible and completely guilt free. So go ahead and enjoy.
TEFF Chocolate Wagon Wheels
Rasperry Jam
1 cup Rasberries // 2 tbsp chia seeds // 2 table spoons 100% Maple Syrup
Combine all ingredients for jam, mash or blend raspberries and set aside.
Marshmellow
1/2 cup cashews (soaked for 2-4 hours) // 1/2 cup desiccated coconut // 1 tsp vanilla paste
1/3 cup nut milk (or coconut milk) // 3 tbsp coconut oil // 2-3 tbsp maple syrup
Add all ingredients for Marshmallow into blender and combine well until you reach a smooth and creamy consistency. Place in fridge and allow to set for at least 1/2 hour.
Biscuit
1/2 cup of Teff brown wholemeal flour // 1/2 cup quinoa flakes // 1/4 Almond meal // 14 medjool dates (soaked for 10-13min)
Place all dry ingredients in processor or blender. Then add dates and blend until mixture sticks and clumps together. Place biscuit mixture between 2 sheets of baking paper and roll to a thin layer. Cut into round shaped cookies. Place in freezer for a minimum of 15 min.
Assembly
Using a pipping bag - pipe marshmallow filling onto one biscuit leaving a well in the centre , where you will spoon the Raspberry jam onto, then top with another biscuit. Once you have assembled all the biscuits place in freezer for 10-15 minutes while you make the chocolate.
Raw Chocolate
1/4 cup coconut melted oil, / 1/2 cup Raw Cacao Powder / 1/2 cup Cacao melted Butter / 1 tsp Vanilla paste / 1/4 cup Maple Syrup - mix all chocolate together.
Now the fun and messy part begins, so if you have kiddies get them involved, they love this part :)
Remove Biscuits from freezer once you have completed the Raw Chocolate, start Dipping the biscuits into the chocolate, then drizzle the rest over the top. Place them back into freezer for 20- 30min.
