Teff Choc, Coconut & Peanut Butter Slice

Calling all fans of peanut butter & Chocolate!

This incredible Teff recipe was created for us by @lukedaley_nutritionist. Luke is a qualified nutritionist based in Melbourne. Luke and his wife Carly run an amazing nutrition based business that offers a range of nutritionally structured programs including cooking demonstrations that are designed to raise community awareness of what we’re consuming and how simple, actionable changes can make a positive impact on their overall wellbeing.

 

Luke developed this Teff slice recipe as there are many low nutrient slices around, but not so many that are nutrient dense with lower sugar levels! So here it is, delicious and quite nutritious! Still remember to be snack wise though as it does contain a lot of peanut butter.

Teff Choc, Coconut & Peanut Butter Slice

Ingredients

2/3 cup of raw peanut butter.
1/2 cup of desiccated coconut.
1/3 cup of Teff Grain.
1 tbsp of maple syrup.
1 tsp of organic stevia.
50g of melted 85% dark chocolate.

 

Method

  1. Blend the ingredients in a food processor until smooth.
  2. Line a 20cm x 20cm tray with baking paper
  3. Add the mixture to the tray and press it into the corners to make it flat.
  4. Melt 50g of dark chocolate in a microwave for 30-45 sec or until melted.
  5. Add to the top of the slice the mixture and spread evenly.
  6. Cover the tray with a chopping board and place in the fridge overnight to set.

 

The coconut chocolate slice can be put in the freezer for another day and last for 3 months.  Or if you are going to eat it with friends or family in the next few days it is a good idea wrapping in up in an @Greenerlifeau reusable food wrap to keep the freshness in and of course this prevents the use of single-use glad wrap.
