Recipe Idea: White Rice Flour Pancakes
Makes 12 pancakes | Prep time: 10 mins | Cook time: 15 mins
Ingredients:
200g Outback Harvest White Rice Flour
50g tapioca flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
300ml buttermilk
1 tsp vanilla extract
2 tbsp melted butter
Method:
In a large bowl, whisk together the White Rice Flour, tapioca flour, sugar, baking powder, baking soda, and salt.
In another bowl, beat the eggs and then add the buttermilk and vanilla extract. Mix well.
Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix.
Heat a non-stick skillet over medium heat and lightly grease it with melted butter.
Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Serve warm with your favorite toppings, such as fresh fruit, maple syrup, or yogurt.
