Recipe Idea: Red Sorghum Pancakes
Makes 10 pancakes | Prep time: 10 mins | Cook time: 20 mins
Ingredients:
· 200g Outback Harvest Red Sorghum Flour
· 50g gluten-free flour
· 2 tbsp sugar
· 1 tsp baking powder
· 1/2 tsp baking soda
· 1/2 tsp salt
· 2 large eggs
· 300ml buttermilk
· 1 tsp vanilla extract
· 2 tbsp melted butter
Method:
1. In a large bowl, whisk together the Red Sorghum Flour, gluten-free flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, beat the eggs and then add the buttermilk and vanilla extract. Mix well.
3. Pour the wet ingredients into the dry mixture and stir until just combined. Do not overmix.
4. Heat a non-stick skillet over medium heat and lightly grease it with melted butter.
5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
