Teff (Eragrostis teff) is a cereal grain from Ethiopia and Eritrea in Africa.
Considered an ancient grain believed to have been domesticated around 4000 and 1000 BCE.
Teff is the smallest grain in the world. The grains are round and resemble the size of a pin head. Teff Grains can be consumed whole or milled into flours and are traditionally used to make a flatbread called injera but also used in applications for Porridge, Puddings, Cakes, Muffins, Baked goods, as a substitute for rice, and distilled for Alcohols.
There are two common variety’s of Teff flours available being White Teff Flour (sometimes called Ivory Teff Flour) and Brown Teff Flour (sometimes called Red Teff Flour).
Gluten Free
Unlike other flours that contain Gluten such as wheat, barley, and rye, White Teff flour is naturally Gluten-Free which makes it the perfect choice for people who have Coeliac disease or who are sensitive to gluten.
As more and more are people across the globe are being diagnosed with Celiac disease or gluten sensitivities, the demand for gluten-free flours has grown substantially over the last decade which has made our White Teff Flour and White Teff Seeds a popular choice.
Nutrition & Gut Health
Common Wheat grains when milled into flours are typically processed removing the layers of bran and germ which makes wheat flours lighter and fluffier to eat. However in doing so it strips the flour of it’s vital vitamins, minerals and fiber.
Due to White Teff grains being so small, it is extremely difficult to remove the bran and germ, and so they are often milled whole and are labelled a wholegrain flour retaining all of those properties mentioned above.
Wholegrain White Teff Flour is higher in protein than many cereal grains and naturally contains essential amino acids.
White Teff flour is also higher in fiber than many other cereal grains. This is due to the bran and the germ remaining during the milling process. High Fiber may helpful in preventing chronic diseases like heart disease, bowel disease, kidney disease, and type 2 diabetes. With high levels of insoluble fiber in particular. This type of fiber stays mostly undigested in your gut. This causes your stool to bulk up and can help with regular bowel movements.
The insoluble fiber in teff can feed the bacteria in your gut. This is called a prebiotic. A healthy balance of gut bacteria is important for good health.
White Teff flour has more calcium and iron than most other cereal grains and 100 grams of Teff bread has about 3.3mg of iron which is upto 45% of your daily recommended iron intake.

Japanese Vegetable Okonomiyaki Pancake
*Makes 2 pancakes *Prep time: 10 mins
(Cook time: 10 mins plus 1 hour chill time)
Ingredients
100gms Gluten free flour
100gms Outback Harvest White teff flour
250ml milk
2 large eggs
1 tbs sesame oil
1 clove garlic finely sliced
¼ wombok cabbage
1 spring onion finely diced, reserving green parts for garnish
Pickled ginger, roasted shallots, toasted sesame seeds, kewpie & BBQ sauce to serve
Method
1. In a jug, mix your flour, milk and eggs until well combined.
2. In a medium frying pan, heat up your sesame oil.
3. When hot, add in your garlic, wombok, and spring onion whites and caramelize for 4-5 mins.
4. When caramelized lightly, slowly pour in your pancake mix and stir until combined.
5. Cook for 3-4 mins on one side then flip pancake and cook for a further 4-5 mins.
6. Once golden, slide onto a plate, and using a criss cross pattern, squirt on your kewpie and BBQ sauce in alternating patterns, sprinkle with spring onion, roasted shallots and toasted sesame seeds, serve with pickled ginger
