It’s a wholesome granola that is packed with vitamins, minerals, fibre and plant protein.

Gingerbread Teff Granola

Prep time: 10-15mins

Cook time: 15-20mins


  • 1/2 cup pitted dates
  • 1/2 cup Ivory Teff Grain
  • 1/2 cup buckwheat
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • pinch of nutmeg
  • 1/4 cup goji berries


  1. Preheat your oven to 180 degrees Celsius and line a tray with baking paper
  2. Soak the dates in warm water for 10 minutes to soften, then drain and blend until smooth to make a date paste
  3. Combine the spices, teff and buckwheat
  4. Stir the date paste through and mix until all the grains are well coated and it forms a crumbly mix
  5. Spread evenly onto your baking tray and bake in the oven for 10 minutes, give it a quick stir and bake for another 10 minutes until golden
  6. Allow to cool, then gently mix through the goji berries


  • Store this granola in a sealed glass jar or container
