Minnie has created this incredible Teff Waffle recipe that’s vegan, gluten free, delicious and surprisingly nourishing. We recreated this one and agree with Minnie when she says that they’re one of the fluffiest, lightest and most crispy waffles out!

So, In the words of Minnie, here are the “DEETS”:

Vegan Teff & Buttermilk Waffles

Ingredients

  • 1 cup Brown Teff Flour

  • 1 cup buckwheat flour

  • 2.5 Cups Almond Milk

  • 5 tbs almond meal

  • 5 tbs maple syrup

  • 1 tsp corn flour/strach

  • 2 tsp apple Cider vinegar

  • 2 tsp baking powder

  • 3 tsp vanilla extract

  • 3 flax eggs (3tbs flaxmeal + 7tbs water)

Vegan Butter Milk

  1. In a bowl mix almond milk and apple cider vinegar, allow to curdle for 10 minutues

Waffles

  1. In the meantime combine Brown Teff Flour, buckwheat flour, almond meal, baking powder, corn flour, maple syrup, vanilla extract & a shake of cinnamon + salt in a large bowl.

  2. Add vegan buttermilk and flax eggs

  3. Whisk ingredients until batter is consistent and smooth.

  4. Pour heaped ladle of waffle mix onto pre-heated waffle maker, close lid.

  5. Patience is key here - don’t lift the lid for approximately 8 minutes, the longer you wait the crispier the waffle!

  6. Top with berries, peanut butter, coconut flakes, and a side of natural coconut yogurt

  7. ENJOY!
