Teff, Chocolate & Almond Butter Cookies
Ingredients
1 ½ cups Ivory Teff flour
½ cup maple syrup
1 tsp vanilla extract
½ cup coconut oil or light olive oil
1 cup almond butter (we used The Almond Farmer’s Chia & Date Almond Butter, but whatever you have on hand is perfect)
½ cup (approximately) chocolate of your choice (or cacao nibs), crushed into small chunks
Method
Preheat your oven to 180 degrees celsius
Simply add all ingredients to a bowl and stir until well combined
Roll the dough into balls of approximately 1 tablespoon, then press lightly with a fork to flatten.
Bake for 12-15 minutes until golden, then set aside to cool
Enjoy with a warm cup of tea of coffee
